Sharjah24: Food lovers waiting to experience an exotic trip to Mexico were not disappointed as the “Spice and Soul: Mexican Cooking with Karla Zazueta” got under way at the 16th edition of the Sharjah Children’s Reading Festival (SCRF 2025).

Zazueta ramped up the excitement by quizzing the kids about Mexico and its cuisine, the best places that serve Mexican food in the UAE and then inviting children in the audience one after the other to help her with the cooking. The snack made with tortillas, cheese, prawns and vegetables was called Tacos Gobernador, which according to Zazueta, was originally a fusion dish prepared for a state governor by a big restaurant in Mexico.

She began by heating oil and butter in a frying pan over medium heat, adding chopped onions and garlic soon after. Once they were lightly fried, she added chopped bell pepper and celery, and then chopped tomatoes. Once the vegetables were fried, she added the prawns, seasoned it with salt and pepper, and cooked for a while until they changed colour. She squeezed lime juice over the mixture and set it aside. Then she got about heating the tortillas on a griddle pan and placed some grated mozzarella cheese over it. When the cheese melted, she spread some of the prawn stew in it and folded it. She even demonstrated how it has to be eaten by tilting the head and bringing the mouth down to it to prevent spillage.

The dish was so delicious that even children who are not fond of vegetables in their diet finished the servings in no time.

Until May 4 at Expo Centre Sharjah, the 16th edition of SCRF promises an immersive experience under the theme “Dive into Books”. Organised by the Sharjah Book Authority (SBA), this year’s agenda features 133 guests from 70 countries, and 122 Arab and international publishing houses from 22 nations.
