Sharjah24 – Reuters: On a large table in a communal kitchen in Tripoli, dozens of dome-shaped doughs are lined up as chefs transform them into a Libyan dish known as Bazin. The popular meal is traditionally distributed during the month of Ramadan to families and passersby.
Bazin consists of a large dumpling made of barley flour, served in the middle of a sumptuous tomato-based stew.
But the explosion of flavors offered by the dish is not easily achieved. It requires a laborious process of mixing the thick barely dough with a stick for hours.
This complicated process is what prompted some volunteers to start an initiative to distribute the meal, making the popular dish accessible to many during the month of Ramadan.
The ingredients for the meals are donated by local restaurants or residents who want to support the project, which has proven to be very popular.
The chefs prepare close to 200 meals a day, and still are unable to meet demand.
